Myulchi Bokkeum is one of the most popular banchan (side dishes) in Korea. It might seem a bit too exotic to some. But everyone that I know who has tried this dish has fallen in love with it. And I really mean everyone. Even my little niece at the age of two couldn’t get enough of this delectable side dish. One bite and she was hooked. Luckily, this was one of my aunt’s specialties. And when my brother’s family moved away to a different state, my aunt used to mail huge batches of myulchi bokkeum to my brother for my little niece.

I decided to cook some red meat this week. I’m one of those people who need some animal protein – red meat in particular – to feel “all-there.” My body just doesn’t seem to absorb iron from plants efficiently. Whatever the reason, I get horribly iron-deficient. Dark under-eye circles. Fatigue. Headaches. Muscle aches. A whole gamut of symptoms I won’t bore you with. I just eat a little of red meat once a week for a few weeks. And voilà. Symptoms gone.

Easy Vegetable Bibimbap

Bibimbap is one of the most popular Korean dishes. Traditionally, it is made with bulgogi, fried egg, and cooked vegetables atop steamed rice. I make the traditional bibimbap from time to time, but I make this “no-cook” version when I’m so busy that I want to clone myself (which is all too often). It’s super fast and easy to make. And everyone’s satisfied at the end of the meal. It will take less than 15 minutes to put together, but it’s as satisfying to the palate as a dish that will take hours. I posted a slightly different version of this dish when I first started this blog, but I thought I would revisit it considering how often this bibimbap shows up on our dinner table.

I just got back from Cali last weekend. And like a true dodo head, I left my camera there. I hadn’t been feeling all that well for the duration of the trip.
