I love nuts: almonds, walnuts, pecans, cashews, etc. I get this from my mom. My mom used to have them all over the house when I was growing up. Even now, she has them in the cabinets, in the fridge, on the coffee table, and even in her car.

I used to make fun of her when I was little, but now, I get it. They are good with just about anything and good for just about any occasion. And I especially love candied nuts. I used to buy tons from Trader Joe’s. My husband used to joke that I keep them in business. I rarely buy them now, because they are so easy to make at home.

Yup. It’s another quick and easy meal. I wish I could say that I whip up elaborately fancy meals often, but that would be a total lie. Most of my meals for the past few months have two things in common. You guessed it: quick and easy. I’m hoping things will slow down soon, but I’m not holding my breath. And I’m quite enjoying my quick and easy meals, especially my multitude of bibimbap. This week, it was bibimbap with maple-glazed edamame.

My husband scared the bejesus out of me when we sat down for dinner a few weeks ago. All of a sudden he yelled, “OH MY GOD!!!” I thought he saw a spider or something worse. So I let out a little shriek of my own. But he followed it up with, “THIS IS THE BEST FISH I’VE EVER HAD!!!” After I punched him in the arm and screamed at him for scaring the crap out of me, I took a bite of the halibut on my plate. It really was delicious. It was soft, moist, and so flavorful.

Truthfully, I’m not much of a tofu eater. Aside from a few Korean dishes I grew up with, I wasn’t much of a fan. It’s pretty much a blah, flavorless protein, and I was equally blah, agnostic about it. But I guess it would be more accurate to say that I WASN’T much of a fan.
