Bibimbap is one of the most popular Korean dishes. Traditionally, it is made with bulgogi, fried egg, and cooked vegetables atop steamed rice. I make the traditional bibimbap from time to time, but I make this “no-cook” version when I’m so busy that I want to clone myself (which is all too often). It’s super fast and easy to make. And everyone’s satisfied at the end of the meal. It will take less than 15 minutes to put together, but it’s as satisfying to the palate as a dish that will take hours. I posted a slightly different version of this dish when I first started this blog, but I thought I would revisit it considering how often this bibimbap shows up on our dinner table.
Spicy Roasted Garlic Hummus
I ate a ton of hummus when I in college. It was easy to make. I could dip almost anything in it for extra flavor. It was delicious. And I guess it added some much needed protein to my gummy bears/french fries/donuts diet, not that I cared much about protein at the time.
It still remains one of my favorite dips/spreads. And I have made many variations of it. I’ve made it with different types of beans, different stir-ins, and different types of flavoring sauces. But one of my favorites is the Asian-style hummus flavored with roasted garlic cloves and gochujang (Korean chili pepper paste).
Sautéed Green Beans with Spicy Korean Chili Pepper Sauce
Sautéed Green Beans with Spicy Korean Chili Pepper Sauce (alternatively, Sautéed Green Beans with Gochujang Sauce) add a kick of flavor to any meal. And although I can make a meal out of these beans (along with some brown rice), I usually serve them with some pan-fried tofu for the sake of protein.

Kimchi Fried Rice and Creamy Black Bean Burritos
When I make guacamole, I always make a ton. I want to expend the energy once and milk the benefits of my labor for a few days. I’m kind of lazy that way. And when I have leftover guacamole (remember to store it properly), I always make one or more of three dishes. I’ve already posted two of the dishes: the sweet potato and black bean tacos and the TLT (tempeh, lettuce, and tomato sandwich). And the last of the troika is the kimchi fried rice and creamy black bean burritos.

Sweet Potato and “Un-Fried” Bean Tacos
I love Mexican food. I partly “blame” or “credit” this affinity to my aunt. My aunt was a big part of my life growing up. And we spent a lot of time together when I was little.
When she became pregnant with her first child, the only dish she craved for a short period was rice and beans. I’m not kidding you. The only craving of this pregnant Korean woman was rice and beans. And she would take me along to various Mexican restaurants. It was at this time I realized how much I LOVED Mexican food. And not unlike my aunt, I am crazy about refried beans. I love everything about it: the creaminess, the slight saltiness, the richness … Yum.
