I decided to cook some red meat this week. I’m one of those people who need some animal protein – red meat in particular – to feel “all-there.” My body just doesn’t seem to absorb iron from plants efficiently. Whatever the reason, I get horribly iron-deficient. Dark under-eye circles. Fatigue. Headaches. Muscle aches. A whole gamut of symptoms I won’t bore you with. I just eat a little of red meat once a week for a few weeks. And voilĂ . Symptoms gone.
Seared Tofu with Soy-Maple Sauce
Truthfully, I’m not much of a tofu eater. Aside from a few Korean dishes I grew up with, I wasn’t much of a fan. It’s pretty much a blah, flavorless protein, and I was equally blah, agnostic about it. But I guess it would be more accurate to say that I WASN’T much of a fan. Because I’ve been going crazy about tofu lately. More specifically, Seared Tofu with Soy-Maple Sauce.
Easy Vegetable Bibimbap
Bibimbap is one of the most popular Korean dishes. Traditionally, it is made with bulgogi, fried egg, and cooked vegetables atop steamed rice. I make the traditional bibimbap from time to time, but I make this “no-cook” version when I’m so busy that I want to clone myself (which is all too often). It’s super fast and easy to make. And everyone’s satisfied at the end of the meal. It will take less than 15 minutes to put together, but it’s as satisfying to the palate as a dish that will take hours. I posted a slightly different version of this dish when I first started this blog, but I thought I would revisit it considering how often this bibimbap shows up on our dinner table.
Soy-Mango Glazed Salmon
Who wants to cook in heat of summer? I don’t. I try my best to do as little cooking as possible during these warmer months. So you can count on some easy lazy recipes from me for the foreseeable future. Don’t worry. Lazy doesn’t translate to flavorless or boring. I’m a huge fan of food. And flavor/taste is a must for all of my meals.
Korean Beef and Kimchi Tacos
I just got back from Cali last weekend. And like a true dodo head, I left my camera there. I hadn’t been feeling all that well for the duration of the trip. I guess it took a toll on my brain in addition to my body. Luckily, I have a loving mom, who immediately shipped the camera to me along with a care package.
