Creamy and Spicy Korean-Style Slaw

I was really in the mood for a fat sandwich a few days ago. But even with sandwiches, I need a little bit of Asian or Korean flair to it. So I decided to make some Korean-flavored slaw to add to the sandwich in lieu of lettuce. I usually make it mayo-free, because I’m not crazy about mayonnaise. I rarely ever eat it. In fact, I only ever eat it mixed with gochujang (with a very few exceptions). But I wanted something creamy and spicy for my sandwich.

I usually make it with napa cabbage, but you can substitute it with regular green cabbage or even bok choy. And I add a lot of cucumber slices for their crunch. This slaw is perfect for a meaty sandwich or just as a side dish for those end of the summer barbecues.

Ever since Trader Joe’s came in to New York City, I see people eating those toasted seaweed snacks everywhere. I get them occasionally, but I usually just make them at home. I like them right off the heat – super crispy and warm. That how I’ve always eaten them.

Takeout at Home: Mongolian Beef

When I was in elementary school, my uncle owned a popular Chinese restaurant in Los Angeles that catered to Americans. My family and I were there quite often and held most of our family celebrations at the restaurant. One of my favorite dishes was Mongolian Beef. It could have been THE favorite, considering I had the dish every time I was there. I even liked the green onions in the dish. And I generally hated green onions at the time.

Sugar-Free, Gluten-Free Blueberry Muffins

I don’t have much of a sweet tooth. I’m more of a carb person. But I do crave sweet stuff occasionally. When I do, I usually make my favorite gluten-free blueberry-lemon muffins. But when I’m doing a detox or a cleanse, I need something a little different. And these date-sweetened, gluten-free blueberry muffins are my go-to “detox” snack. These are truly guilt-free, so moist, and so tasty.

Vegetable Gimbap/Kimbap

Definition of GIM·BAP: Laver or Dried Seaweed (Gim) · Bap (Rice)

Gimbap always takes me to a happy place. It’s no wonder. Gimbap is commonly consumed at picnics. And understandably, it conjures up warm weather, fresh-cut grass, and fun. It makes sense since it’s very much an on-the-go food. Everything is wrapped in a neat package that can be easily be popped in your mouth. They are delicious and flavorful just the way there are. No need for sauce. No mess. No fuss. So my mom ALWAYS made sure I had plenty whenever I went on a school field trip or a picnic. Thanks mom!
