I just got back from Cali last weekend. And like a true dodo head, I left my camera there. I hadn’t been feeling all that well for the duration of the trip. I guess it took a toll on my brain in addition to my body. Luckily, I have a loving mom, who immediately shipped the camera to me along with a care package. I will have to post the pics of the package at a later time. But here is a post of the first batch of the photos I uploaded from my just-received camera: Korean-Style Beef Tacos.
Kimchi Bulgogi Panini
I hate to generalize. But I will do it anyway. When Koreans cook, size matters. This is especially true when it comes to marinating meats – always 10+ lbs. If a Korean cook doesn’t follow this general rule of thumb, he/she is relentlessly ridiculed by fellow Korean cooks. They’ll say you have a “small hand.” Nope, it doesn’t mean that. 😉 It just suggests that you are not generous; you think too small. Pretty tough, huh? Ok. It may be a slight exaggeration, but not by much. It may just be my family, but I don’t think so.
Grilled Cheese and Dark Chocolate Sandwich with Strawberry Dipping Sauce
Last week, I read on The Huffington Post that dark chocolate and Parmesan cheese make a great pairing. Well, their exact words were “scientific pairing.”
However, we didn’t have any Parmesan. We usually don’t have ANY cheese in the fridge. I’m lactose-intolerant for the most part with the exception of little bits of goat cheese and butter. To make matters worse, I LOVE cheese. So, having cheese in our fridge would be akin to torture for me. And when I do have any substantial amounts of cheese, it better be worth it.
But for reasons too long to explain, we had Gruyère, Havarti, and Cheddar in our fridge. If dark chocolate pairs well with parmesan, why not with other types of cheese? I decided to put that to the test by making grilled cheese with the existing cheese I had in the fridge. It is grilled cheese month after all.

Ham, Cheddar, and Caramelized Apple Sandwich
My mom declared ham, cheddar, and apple sandwich her favorite sandwich ever.
That’s saying a lot. I grew up near Pasadena, arguably the cute café capital of Southern California. During my teenage years, my mom and I used to visit various cafés to partake in the atmosphere and gourmet sandwiches. It was our mother and daughter weekend routine. I felt so sophisticated sipping cappuccinos and nibbling on pretty sandwiches. Little did I know, my mom didn’t really like the sandwiches. She just liked our time together.
