I hope you had a lovely Valentine’s Day and are in the midst of enjoying this long President’s Day weekend.

It’s a leisurely Sunday in our home; and it’s another sweet potato recipe this week. Well, this isn’t just another sweet potato recipe in our home. It’s one of our mainstays, lighter and healthier sweet potato casserole. I don’t know why I haven’t done more posts on sweet potatoes. They are as much a staple in our home as brown rice. And if you are a regular visitor to this site, you know how much we love rice around here.

Sweet Potato Cookies

I’ve received a number of beautiful cookbooks over the past few weeks. In the past, I would peruse through the books for the beautiful pictures, not necessarily the recipes. I’m just horrible at following directions. I’m kind of impatient that way. It’s ironic for a person who blogs about food and recipes. But I’m trying to change that. I’m planning to cook at least one thing from each book I own. It may take a while, but I’ll get there…eventually.

Sweet Potato and “Un-Fried” Bean Tacos


I love Mexican food. I partly “blame” or “credit” this affinity to my aunt. My aunt was a big part of my life growing up. And we spent a lot of time together when I was little.

When she became pregnant with her first child, the only dish she craved for a short period was rice and beans. I’m not kidding you. The only craving of this pregnant Korean woman was rice and beans. And she would take me along to various Mexican restaurants. It was at this time I realized how much I LOVED Mexican food. And not unlike my aunt, I am crazy about refried beans. I love everything about it: the creaminess, the slight saltiness, the richness … Yum.
