Bulgogi Vegetable Gimbap | cHow Divine

I try to make a lot of banchan (Korean side dishes) on the weekends. During the week, I can just eat them cold right out the fridge with some steamed rice that’s always waiting for me in my trusty rice cooker. If I’m feeling a little more ambitious, I would fry up an egg and make bibimbap. And if I’m feeling even more ambitious, I would make gimbap. It doesn’t happen too often, but often enough for me to sate my occasional gimbap cravings. On a side note, you may also know gimbap as Korean “sushi” because of its similarities with the Japanese Futomaki.

This week, I had plenty of vegetable banchan in the fridge that I needed to finish. And I also had some top sirloin in the fridge that I didn’t want to freeze. So I decided to make some bulgogi gimbap. I guess I was feeling ambitious this week…

Sangchu Geotjeori (Korean Lettuce Salad)

Sangchu Geotjeori (Korean Lettuce Salad) is commonly served with Korean Barbecue at Korean restaurants. Its slightly salty, sweet, and vinegary taste complements Bulgogi and Galbi perfectly. I love it, in part, for the convenience, because I use it in lieu of lettuce wraps – saam – sometimes. It’s almost like eating a bulgogi or galbi lettuce wrap, deconstructed. And you don’t have to get your hands “dirty” in the process.

Bulgogi and Spicy Slaw Sandwich

I made Bulgogi and Spicy Slaw Sandwich last week. It’s the same sandwich I was talking about in my last post. It’s just a simple sandwich of bulgogi and spicy Korean-Style slaw. You can add condiments or slices of cheese. But it’s totally unnecessary.

It was soooo good in its simplicity. The soft bun, juicy bulgogi, and the spicy – but creamy – slaw were so perfect together. My husband literally (and I really mean literally) could not talk while he was eating it. He was just emitting these weird sounds. I guess that’s what people call a foodgasm. 🙂

“Bulgogi” Tempeh with Sautéed Onions

I indulged a little too much over the weekend. I don’t know about you. But I can’t say no to soft shell crab, especially the battered and fried ones dipped in aïoli. I can’t pass up fresh sea urchin either – even if those yummy morsels come nestled in cheese smothered pasta. I’m terribly lactose intolerant and gluten-sensitive. Yes. This would be a problem. And who can pass up a prosecco bar? I can’t. So I imbibed a bit.

So like a reasonable person, I planned to forgo dessert. But my plan was thwarted by a complimentary tray of desserts that came to our table. And I can’t let any dessert go untouched. But not only did I “touch” them, I polished them off. To make matters worse, we got a bottle of champagne, a mini chocolate cake, AND a mini carrot cake on our way home. At the end of the night, nothing was left.

Clearly, I have issues with restraint. I know this. I’m nothing if not self-aware.

Korean-Style Grilled Skirt Steak

My beef cut of choice is the tenderloin. If it were up to me, I would only get the tenderloin – not a lot of fat AND tender. But as a benevolent wife and partner, I let my husband pick the cut sometimes. 🙂 I love the buttery texture of tenderloin. But My husband goes more for flavor than texture. And he thinks cuts other than the tenderloin are more flavorful. One of his favorite cuts of meat is the skirt steak. He loves the “fatty” flavor of it. So I get it once in a while.

As you may have guessed or already know, skirt steak is not the most tender of cuts. But it’s not a lost cause. You can do a few things to make the meat more tender to the bite.
