Oi Sobagi – Stuffed Cucumber Kimchi

Oi Sobaegi or Oi Sobagi – Stuffed Cucumber Kimchi – is one of my favorite things to eat in the whole wide world. I should make it more often. It’s actually quite easy to make. But I’ve been using the excuse that I can’t get Korean or Kirby cucumbers from my local grocers.

Truth be told, you don’t really NEED Korean or Kirby cucumbers; I just wanted them. You just need smaller seedless cucumbers that you can pickle.

So imagine my delight when I found bags and bags of small cucumbers during my last trip to Costco. The bag refers to them as “fancy cucumbers.” I don’t know about fancy, but they were the right size AND seedless. So, no more excuses. I MUST make some cucumber kimchi, right?

Prosciutto Kimchi Fried Rice

Kimchi fried rice is one of the most popular Korean dishes. It also is one of the easiest dishes to whip up, which is the reason why it is so popular as a midnight snack.

I had my share of kimchi fried rice as a college student in Northern California. After a night out or during an all-nighter studying for the finals, it was the perfect meal or snack. It also had the benefit of being cheap – important for a starving student!

Filet Mignon with Sautéed Kimchi

I’ve been hearing so much about SOPA (Stop Online Piracy Act) lately. Wikipedia and other sites took their sites offline for a day in protest of this Bill. Now, why are they against a piece of legislation that will fight online piracy? I mean, no one is FOR piracy. I for one don’t want someone using my copyrighted material or intellectual property without my permission or attribution – let alone profit from it. However, I would like to know if I’m committing an act that the bill would criminalize, and if this Bill will criminalize conduct that is currently permitted under the law. And I fear this bill would have an unintended chilling effect on free speech and innovation – instead of its intended, lofty goal of stopping internet piracy.

Bulgogi Kimchi Taco à la Korilla BBQ

I don’t know one Korean who doesn’t like Mexican food. (OK, I’m sure there is at least one; I just personally don’t know one.) Even my mom who isn’t crazy about non-Asian cuisines loves Mexican food. There is just something about the cuisine that suits the Korean palate. I guess pico de gallo, salsa, and pickled jalapenos are akin to the Korean kimchi; and they balance out the richness that may be overwhelming for some.

But have you tried Korean-infused Mexican food? It’s truly delectable! Top your burrito or taco with some gochujang sour cream or guacamole; add some kimchi and bulgogi to burritos, tacos, or quesadillas; stir in some sautéed kimchi in some Mexican rice; and so on. Exceptionally delicious!

Baby Bok Choy Kimchi with Cucumbers

I had the benefit of growing up with a wonderful grandmother who showered me with love and lots of homemade food. We always had at least two or three types of kimchi in the fridge. My grandmother was always in the kitchen whipping up different types of kimchi as well as other delectable dishes. She introduced me to many of the dishes I still enjoy as an adult. And whatever I wanted to eat, she was more than happy to cook. Some of our family members believed she was too indulging. Maybe she was, but her love wasn’t lost on me; I loved her back with all of my heart. She is no longer around. And I miss her.
