I made some simple but super delectable Kimchi Avocado Rolls last week, all thanks to a subpar experience at a restaurant. And it’s become my (new) favorite way to enjoy kimchi. Let me explain. A few weeks ago, I tried a kimchi roll (Gimchi Gimbap) at a restaurant at the urging of the server. He called it “fantastic” and “probably the most popular item” on the menu. You don’t have to twist my arm to try a kimchi dish, but I was a little trepidatious about trying it at a non-Korean restaurant. But we tried it anyway. I’ll say that the dish had a lot of potential. It, however, left me confused.

TLT – Tempeh, Lettuce, and Tomato Sandwich


This is how I fell in love with tempeh.

A few years ago, I decided to eat healthier and start exercising. It wasn’t a weight issue. In fact, I’ve always been on the very scrawny side – much to my mom’s chagrin. And because of this, I ate whatever I wanted. My biggest weakness was fried foods. But you know what? If it doesn’t show up as excess weight on your body, it will show up in some other form. Mine took on the form of CONSTANT fatigue – oh, and the moodiness, probably because I felt so run down all the time.

This is when I started cooking regularly. It’s so much easier to eat healthy when you have control over your environment and your ingredients. But it wasn’t easy in the beginning, because cooking can require some time and patience.

How to Keep Guacamole from Turning Brown


The darkening of the guacamole or avocado is due to the process of oxidation – reaction with oxygen in the air. The skin of the fruit, whether apples or avocados, provides protection from this process until it’s broken.

Before I go on, I will start off by saying that I was a chemistry major in college. So I find things like this quite fun. Yes fun. I am a major nerd. So if you want to skip over the next few paragraphs and right into the instructions, I will not be offended; it’s because you are probably much cooler than I am. And believe me, that wasn’t an attempt at self-deprecation or sarcasm. It’s highly likely a statement of fact. 😛

I will be very brief. But I believe that a basic understanding of the process comes in handy. And knowing WHY you are doing what you are doing will help you do it correctly.

No-Cook Vegan Bibimbap


It’s been so sweltering hot in NYC lately. I just can’t bear to cook anything over a hot stove top. Hmm… I look in my fridge and see that I have carrots, leftover Oi Sangche, romaine, and avocado. And I always have my go-to Korean hot chili pepper paste, Gochujang, in the pantry. Same goes for cooked rice in my rice cooker – a reason you should really think about investing in one if you don’t have one. Perfect for a simple Bibimbap.

I’m not a fan of complicated recipes with a list of 20 ingredients I’ve never heard of or will never use again. It’s a fun read, but not really practical in execution. I try to make my cooking as simple as possible so that I am more likely to cook – instead of just thinking that I should. No-cook bibimbap is a perfect example. Not only is it easy, it’s healthy. AND I am using up ingredients that may go bad in a few days. Simple and economical, it’s my kind of dish.
