It’s a leisurely Sunday in our home; and it’s another sweet potato recipe this week. Well, this isn’t just another sweet potato recipe in our home. It’s one of our mainstays, lighter and healthier sweet potato casserole. I don’t know why I haven’t done more posts on sweet potatoes. They are as much a staple in our home as brown rice. I won’t be cooking over the holidays. I love cooking with family when we get together, but unfortunately we won’t be doing that this year. We’ll be staying put in the city doing the “Friendsgiving” thing. I will, however, be doing some baking. I love the aroma of baked goods in the oven, especially over the holidays. I love nuts: almonds, walnuts, pecans, cashews, etc. I get this from my mom. My mom used to have them all over the house when I was growing up. Even now, she has them in the cabinets, in the fridge, on the coffee table, and even in her car.

I used to make fun of her when I was little, but now, I get it. They are good with just about anything and good for just about any occasion. And I especially love candied nuts. I used to buy tons from Trader Joe’s. My husband used to joke that I keep them in business. I rarely buy them now, because they are so easy to make at home.

I have chickpeas on the brain. I kind of blame it on Amazon. Among other things, I’m addicted to Amazon. I bought 12 cans of garbanzo beans on subscribe and save. That’s a crap load of beans for a tiny family of two. Now why did I do this? Because among other things, I can’t pass up a seemingly good deal. I’m still feeling the high of getting a stainless steel handheld blender at Costco for only $19.99. I probably didn’t even need it. Yes, I have issues.

I’ve been eating clean for the past week or so. No processed foods, no sugar, no red meat, no gluten, and no fried foods. I know. It sounds like a party. 😛 It’s actually not too bad. I don’t crave sweets (except for dark chocolate). I don’t crave anything really, except for french fries. French Fries are my biggest weakness. I would seriously knock an old lady down to get to the last fry in the room.
