I hope you had a lovely Valentine’s Day and are in the midst of enjoying this long President’s Day weekend.

It’s a leisurely Sunday in our home; and it’s another sweet potato recipe this week. Well, this isn’t just another sweet potato recipe in our home. It’s one of our mainstays, lighter and healthier sweet potato casserole. I don’t know why I haven’t done more posts on sweet potatoes. They are as much a staple in our home as brown rice. And if you are a regular visitor to this site, you know how much we love rice around here.

Yup. It’s another quick and easy meal. I wish I could say that I whip up elaborately fancy meals often, but that would be a total lie. Most of my meals for the past few months have two things in common. You guessed it: quick and easy. I’m hoping things will slow down soon, but I’m not holding my breath. It, however, left me confused.

Seared Tofu with Soy-Maple Sauce

Truthfully, I’m not much of a tofu eater. Aside from a few Korean dishes I grew up with, I wasn’t much of a fan. It’s pretty much a blah, flavorless protein, and I was equally blah, agnostic about it. But I guess it would be more accurate to say that I WASN’T much of a fan. Because I’ve been going crazy about tofu lately. More specifically, Seared Tofu with Soy-Maple Sauce.

Kimchi Jumuk Bap (Kimchi Rice Balls)

Kimchi Rice Ball | cHowDivine.com

Jumuk + Bap = Fist + Rice

A friend of mine once asked me what jumuk bap meant. I told her that it directly translated to “fist rice.” She thought it weird, but I never once questioned the reason behind it. It was always very clear to me. It’s usually about the size a small fist. And you have to theoretically make a fist-motion in order to form these suckers. Apparently, that astute observation and explanation didn’t convince her. Whatever. No jumuk bap for you little lady!
